2 Cups of Beans |
Salt |
1 Clove Garlic |
4 Med. Onions |
1 Green Pepper |
Black Pepper |
1 T. Sugar |
3 Stems Celery |
1 T. Sage |
1/3 c. Mazola Oil |
1 T. Tumeric |
1/2 can Tomato Paste |
Pick and wash beans. Soak beans overnight. Rinse beans. Place in pot, along with vegetables and seasonings and oil. Add water to well cover beans. Cook on moderate flame until beans will mash easy to the touch. Add more boiling water if needed. When beans are well done you may blend them with an electric blender.* If soup is too thick, add a little boiling water.
* Years ago a Foley Food Strainer was used which removed the hull of the bean. Blending does not remove the hull.
